No doubt, we’ve all been a bit cooped up lately. Quarantine brings us time for introspection and mindfulness. That being said, we all love to explore. It’s what drives us. How are we to explore in our living rooms when we can’t go anywhere else? As usual, social media is here to save the day.
I reached out to an old buddy from high school to enact a recipe trade. I gave up one of my pretzel recipes in exchange for one of his family’s Hungarian dessert pastry dishes. Even from one’s home, and perhaps with a friend’s guidance, you can allow your palate to travel the world.
The name of the dish is Kifli, and it’s an incredibly old dish. The dough is made from a ratio of one stick of butter per pound of cream cheese, slowly mixing in a dollop of flour. From this alone you can tell that this is a real treat. Before folding them, a small bit of apricot jam is spread onto it. Sugar sprinkled on after, of course. It’s delicious beyond belief.
I reckon this treat can be put through permutation upon permutation, but now seems a more appropriate time to pair it with a tasty dessert wine. We must survive the plague somehow. I recommend a nice glass of Sherry to go with a plate of treats as sweet as this. Champagne works too, but not many are in celebratory moods this week, as one could imagine.
Let this also serve to remind us that even in situations that are as bleak and uphill, we can still treat ourselves well and learn about our friends and the cultures that shape them. France conquered the world with culinary arts, you can conquer your little suburb at least.
